When we were finishing powerboat racing game Aquadelic GT, our engine programmer started experimenting with even more advanced water rendering techniques (projection grid method). At the time (2007) it was very hardware demanding stuff and also one of the reason why we shelved the project at the stage you can experience. We were bored with powerboats so jet ski seemed to provide a more exciting gameplay. The player can make real waves visualized as geometry which affects physics. But there were many problems with this approach which made it impossible to build the vision we wanted. Balacing physics-based simulation games can be nightmare. We were using PC-only tech, going next-gen was hard for a small indie team and then came year 2008... It's different now of course, but after poor interest from publishers for PC release, we had to move to another projects. We hope you would have different opinion and like it. If you are enjoying this little game, you can consider buying Aquadelic GT which is a complete game with similar theme.
